It doesn’t matter what style of pizza is your favorite: when the weather warms up it’s time to rethink what you’re putting on top of your perfectly cooked crust. During the colder months, rustic, warming flavors like rosemary or sausage make the perfect pizza toppers — and pizza topped with hearty, filling ingredients like potatoes, pumpkin, or squash makes a delicious cold-weather meal. But when the snow melts and your local farmer’s market starts to stock ramps, peas, and fresh fava beans, your pizza recipes should follow suit, becoming lighter, fresher, and more colorful.

Spring is a great time to refresh your pizza routine. As Craig Whitson and Tore Gjesteland, authors of Passion for Pizza: A Journey Through Thick and Thin to Find the Pizza Elite, say, “the best pizza is made from the best ingredients” — and spring is the best time to buy a number of fresh ingredients that are perfect for topping pizza dough. April is peak season for asparagus, for example, which is a healthy, colorful, and delicious addition to any spring pie. Sure,asparagus would be wonderful on pizza year-round, but it will be at its most vibrantly colored, most nutrient-rich, and most flavorful during the spring months.

Another perk of changing up your pizza routine during the spring? Warmer weather means you can fire up your grill. It difficult to think of an ingredient that doesn’t taste better with a little bit of char (pizza dough and a multitude of toppings included), so spring is the perfect time to switch from oven-baked pizzas to a more rustic grilled variety. Try grilling leeks or bell peppers (just enough to give them light char marks and soften them a little) before adding them to your crust along with the other toppings.

Whether you take a trip to your local farmers market for inspiration or try one of our great spring pizza recipes, you’re guaranteed to love a pizza topped with the fresh flavors of spring.

Recipe Summary

  • 1/4 cup extra-virgin olive oil, plus more for drizzling
  • 2 (1-pound) fresh prepared multigrain or plain pizza dough balls, at room temperature
  • 1 cup jarred pizza sauce (such as Rao&rsquos)
  • 10 ounces pre-shredded mozzarella cheese (about 2 1/2 cups)
  • 4 ounces salami, soppressata, or spicy Italian sausage
  • 1 small spring onion or fennel bulb, thinly sliced (about 1 3/4 cups)
  • 2 ounces Parmesan or pecorino Romano cheese, grated (about 1/2 cup)
  • 1/2 teaspoon fennel seeds, crushed
  • Flaky sea salt (such as Maldon)
  • Fresh baby greens or herb leaves (such as flat-leaf parsley or basil)

Preheat oven to 500°F with oven rack in lower third of oven. Grease an 18- x 13-inch rimmed baking sheet with 1/4 cup oil place 1 dough ball on 1 side. Using your hands, gently stretch outward into an even layer until it covers half of the baking sheet. (If dough springs back, let it rest for 10 minutes before stretching again.) Repeat procedure with remaining dough ball on opposite side of baking sheet. Press seam together in middle to seal, creating 1 large sheet of dough. Spoon pizza sauce evenly over dough sprinkle with mozzarella, and top with salami, spring onion, Parmesan, and fennel seeds.

Bake in preheated oven until crisp and brown on bottom and edges, about 25 minutes. Remove from oven, and sprinkle with salt. Top with greens drizzle lightly with additional oil.

Spring Pizza Recipe

When you have everything you need, follow these simple instructions to build your own Spring pizza art to grace your Easter table or serve up a perfect lunch for friends or family this year.

Start with washed and dried veggies and herbs.

Start by preheating the oven to 400 degrees and Spray or dust the pizza pan with corn starch or non-stick baking spray.

Stretch the pizza dough to fit your pizza pan.

Sprinkle the cheese evenly over the surface.

Look at your vegetables and herbs and think about the design you would like to make, I started by laying out the green onions for the stems first and then adding the onions.

To make the large flower onion, simply cut a 1-inch piece on the root side of the onion. Do not cut off the roots as they help hold the layers together. Make slices in the onion that will help create the look of petals, play with it a little bit until you get the shape you want, just be careful not to cut all the way through in the center where the roots hold it together.

Follow by adding the rest of the vegetables and herbs until your pizza canvas is full.

Healthy Veggie Pizza

Dust with salt and pepper, spritz all over with the oil, and then bake at 400 degrees for about 12 to 14 minutes or until the pizza is golden brown and the cheese is bubbling.

At 400 degrees temperature and with the oil on top, the vegetables should nicely roast up and be tender in this amount of time.

Let the pizza cool for a few minutes before cutting. For this pizza, I used a standard large pizza rolling cutter and just cut pieces around the flower shapes to help maintain the look of the pizza.
